Ingredients

  • 1 zucchini
  • 1 cup Brussel sprouts
  • 3 small carrots
  • 2 red onion
  • Padron peppers

for the dressing:

  • 1 cup extra virgin olive oil
  • a handful cilantro
  • a handful parsley
  • salt
  • pepper

Instructions

  • Preheat the air fryer.
  • Cut length-size or into the shape you desire the veggies. Use whole veggies if they are small and cook quicker.
  • Fry mix of veggies for 7 minutes at the highest temperature.
  • Take out the basket and lay it on a nice platter, and enjoy.
