Ingredients

  • 1 1/3 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp cinnamon powder
  • 1 egg
  • 1 cup milk
  • 2 tbsp oil
  • pinch of salt

For Cinnamon Sugar:

  • 1/2 cup sugar
  • 2 tbsp cinnamon powder

Instructions

  • Preheat the oven to 375 °F.
  • In a bowl, combine 1all-purpose flour, brown sugar, baking powder, baking soda, a pinch of salt, and cinnamon powder. Once dry ingredients are thoroughly mixed, vegetable oil ( or substitute with melted butter), one egg, and milk. Whisk well until just combined.
  • Combine ½ cup of granulated sugar with 2 tablespoon cinnamon powder. Grease 24 mini-muffin pan with butter. Then sprinkle with cinnamon sugar. Spoon the batter into prepared mini muffin tin, filling each liner ¾ of the way entire. Sprinkle each muffin with a generous amount of cinnamon sugar. Send mini cinnamon muffins to the preheated oven and bake for 10 minutes.
