- 1 pound tomatoes
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- 2 tbsp BBQ sauce
- 1/3 cup sesame seeds
- 1/3 cup peanuts
- 3 cloves of garlic
Roast peanuts in a skillet over medium heat. Stir regularly using a silicone or wood spatula to prevent burning and ensure even roasting. Toast until nuts turn golden and become fragrant.
In a separate dry skillet, toast the sesame seeds. For more flavor, add some garlic cloves to the sesame. Roast for about 3 to 5 minutes until golden brown and fragrant. Once ready, remove the garlic.
Slice tomatoes. Transfer them to a large mixing bowl. Pour over the BBQ coating and stir. Seasons tomatoes with salt to taste. Sprinkle some fresh spring onion if desired.
