Finely chop 2 lbs of raw shrimp and green onion using a sharp knife.
Combine chopped shrimp, green onions, 1 tsp granulated garlic, 1 tsp sriracha, 1 tbsp oyster sauce, 1 tbsp oyster sauce, and 1 tbsp fish sauce. Gently mix the ingredients.
Now, fill a large bowl with warm water and dip rice paper wraps for 10-15 seconds until it’s soft and pliable. Cut the rice papers with the help of a scissor.
Assemble the wraps by placing 1 tbsp minced mixture into halved rice paper. Wrap the filling by folding the sides and rolling it tightly.
Preheat the air fryer to 360°F (182°C) for 5 minutes. Arrange the wraps inside the air fryer basket in a single layer without overcrowding. Cook for 4 minutes. Then, flip and cook the other side for 4 minutes or until crispy and golden.
