Add 1 pound chicken gizzards, one bay leaf, ⅓ tsp black pepper, and 1 tbsp salt in a pan filled with water. Boil for 1 hour on medium heat until they become tender.
Drain the water and place the gizzards in a bowl. Add ½ lime juice, ½ cup soya sauce, and 1 tbsp granulated garlic. Toss the gizzard so that they get adequately coated. Marinate for 15 minutes.
Preheat the air fryer for 5 minutes at 360°F (182°C). Thread the gizzards on the skewers and place them in the air fryer basket without overlapping.
Pour ½ cup barbecue sauce on the gizzard skewers and use a brush to spread the sauce evenly.
Cook the gizzards in the air fryer for 10-12 minutes at 360°F (182°C) until they are crispy and juicy.
