Classic Instant Pot Risotto Version

Ingredients

  • 1 cup rice
  • 2 cups chicken broth
  • 1/4 cup butter
  • 1 glass white wine
  • 1 1/2 cup parmesan cheese
  • 2 cloves garlic
  • Seasoning

Instructions

  • Turn on the Instant Pot and add the butter with 2-3 cloves of garlic to infuse the butter with a flavourful aroma.
  • In 1 minute add the rice and nicely mix until all the butter has absorbed. Stir frequently to avoid burnt rice.
  • Then pour ½ of white wine with half amount of parmesan and mix gently. You have to make this process 2-3 times to assure that the rice has absorbed all the flavours from wine, broth, and parmesan. Stir frequently to avoid burnt rice.
  • If you see that your risotto is too thick, easily adjust broth or water and some parmesan at taste.
  • I adjust salt at the end when the risotto is ready. The process of making the risotto and adjusting all the ingredients last about 25 minutes in the Instant Pot.
  • Take a nice plate and nicely serve the risotto topped with some greenies.
