Creamy Keto Coleslaw is one of my favorite healthy side dishes that pair so well with any packed with protein main dishes. This totally simple and tasty recipe is quick and easy to prepare.

Ingredients

  • 4 cups shredded white cabbage
  • 3 cups shredded red cabbage
  • 2 cups shredded carrot
  • 1/2 cup spring onion
  • 1 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1/4 tsp garlic powder
  • pinch of black pepper
  • pinch of salt

Instructions

  • In a mixing bowl combine 1 cup of mayonnaise, 2 tsp yellow mustard, and 1/4 tsp garlic powder, black pepper, and a little bit of salt. Whisk well until smooth.
  • Shred the cabbage by chopping it thinly with a sharp knife or mandoline. Transfer cabbage in a large mixing bowl. Then shred the carrot and add it to the cabbage. Toss some chopped spring onion to the same bowl.
  • Add half of the dressing over the vegetables. Combine gently everything. Now is up to your taste, if you desire the coleslaw creamier then add the remaining dressing.
