Turkey Roll With Mushroom Filling

Ingredients

  • 2 lb turkey breast
  • 4 tbsp olive oil
  • 2 garlic cloves
  • 1 leek stalk
  • 1 carrot
  • 6 oz mushrooms
  • 1/4 cup fresh parsley
  • 4 slice bacon
  • 1/2 tsp black pepper
  • 1 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp smoked paprika

Instructions

  • Butterfly the turkey breast. Watch the video for detailed instructions. Season with salt, pepper mix, ground coriander, and garlic on both sides
  • Chop vegetables into small to medium chunks. Slice Bacon.
  • Set the Instant Pot on saute program. Add two tablespoons of olive oil. Once hot, add minced garlic, chopped leek, and carrot. Saute until vegetables soften (about 5 minutes), and then add chopped mushrooms. Season everything with a pinch of ground pepper, salt, garlic, and smoked paprika. Cook, for another 10 minutes, until vegetables are soft, mixing constantly. Once cooked, transfer the filling to a plate and set aside.
  • Continue cooking in the same pot and on the same program. Add bacon to the pot and fry it until browned and the fat has melted. Transfer the bacon to a separate bowl.
  • Once you have butterflied the turkey breast, it is time to stuff it and roll. ​​Spread mushroom filling evenly over the surface of the butterflied breast, leaving about 1/2" at the borders. Top with fried bacon and sprinkle chopped parsley. Start rolling the meat tightly, starting with the long end. To have everything sealed better, secure the border with some toothpicks.
  • Set the Instant Pot at saute mode. Transfer the turkey roll in a clean pot with 2 tablespoons of olive oil. Brown on all sides. Add ¼ cup of water and close the lid. Change the program to pressure cooking mode on high for 10 minutes.
  • When time elapses, release the steam and then open the lid. Transfer the turkey roll to a plate or cutting board. Brush the meat with pan drippings to infuse it with even more flavor. Slice and garnish with fresh herbs if desired.
