Split Pea Soup

Equipment

Ingredients

  • 1 medium onion
  • 3 medium celery ribs
  • 2 medium potatoes
  • 3 tbsp butter
  • 2 cups green peas
  • 1 cup heavy cream
  • 1 cup broth

Spices

  • 2 bay leaves
  • sea salt
  • pepper

Garnish

  • 4 slices bacon
  • some grated parmesan

Instructions

  • Chop 1 medium onion
  • In the heated pan sauté butter and spices, and add the chopped onion
  • While the onion is simmering, chop 3 celery ribs and 2 medium potatoes
  • When the onion is smooth add chopped celery ribs and potatoes with a glass of water or broth and let them simmer until the potato is tender
  • Add 2 cups of frozen peas to the shimmering veggies
  • Cook all the veggies for 10 more minutes
  • Heat another skillet and fry 3-4 slices of good quality bacon
  • When the split pea soup is ready, cool down for some minutes and blend all the ingredients until it purees totally
  • Add 3.5 oz of heavy cream and mash the ingredients together in the bowl until the mixture has the consistency of a thick paste. Add salt and pepper to taste, and spices at your taste
  • In case you think your soup is too thick, add more broth (half a cup) and blend some more minutes until it gets the consistency you want
  • Garnish with grated parmesan, bacon or ham over the soup
