Stuffed Zucchini Boats

Ingredients

  • 3 zucchini
  • 16 oz sausage
  • 1 onion
  • 3 garlic cloves
  • 1/2 cup canned tomato puree
  • 8 oz mozzarella cheese

Instructions

  • Wash and halve them lengthwise. Use a spoon or an ice-cream scoop and scoop out the flesh making a hallow canal in length. Drizzle some olive oil, salt, pepper.
  • Chop the onion and the zucchini flesh. Mince some cloves of garlic. Heat the skillet with 2 tbsp of olive oil. Add onion and minced garlic. Once the onion softens, stir in zucchini flesh and ground meat. Saute everything for about 10 minutes.
  • Add tomato paste, taste for seasoning, and cook for five more minutes. Now spoon in the filling in hollowed-out zucchini boats. Top with mozzarella.
  • Bake stuffed zucchini boats in the preheated oven at 350 ºF (180 ºC) for 40-45 minutes.
