Roasted Pears with Cashew Sauce

Ingredients

  • 2 pear
  • ¼ cup maple syrup
  • 1 tbsp fresh lemon juice
  • 1/2 tsp ground cardamon
  • 4-6 whole cardamom pods
  • 1 tbsp butter for greasing
  • ¼ cup almong flakes

Cashew Sauce

  • 1 cup raw cashews
  • ¼ cup maple syrup
  • ¼ cup almond milk
  • ¼ tsp ground cardamom
  • vanilla bean
  • 4-6 whole cardamom pods

Instructions

  • Preheat the oven to 375 °F. In a mixing bowl, stir together maple syrup, lemon juice, and ground cardamom. Grease the bottom of a baking dish with butter.
  • Wash and pat dry the pears. Cut them in half, remove the peel and core.
  • Generously toss them in the maple syrup mixture. Place the pears cut-side down in the baking dish. Pour any remaining maple syrup mixture over the pears. Sprinkle small pieces of butter, almond flakes and 4-5 whole cardamom pods on the top of the fruit.
  • Transfer to the oven and bake for about 15 minutes. Then gently turn them over and continue roasting for 10 more minutes, until soft and tender

Cashew Sauce

  • Soak cashew overnight. Drain and rinse them. In a food processor, ground about 4 whole cardamom pods. Then transfer nuts to a food processor along with cardamon. Cut the vanilla in half and then split each piece down the center using a sharp knife. Make sure you scrape out all of the seeds. Add vanilla seeds to the blender along with the cashews. Moreover, pour along with nuts, maple syrup, and almond milk. Process until creamy and smooth. Set aside
