Equipment

Ingredients

  • 6 potatoes
  • 2 bay leaves
  • salt

Dijon Vinaigrette:

  • 1 tbsp Dijon mustard
  • 1/4 cup white wine vinegar
  • 1/2 cup olive oil
  • salt
  • black pepper

Herb vinaigrette:

  • 1/2 cup parsley
  • 1/2 cup dill
  • 1/2 cup spring onion
  • 3 cloves garlic

Instructions

  • Take a pot and fill it with water. On a large cutting board cut rounds the potatoes and add them to the pot with water. Season with salt and add some bay leaves. Boil until soft and tender, about 15 minutes.
  • Meanwhile, take the board and start chopping parsley or cilantro, dill, and spring onion.
  • Take a bowl and add all the greenies continuing with 1 tbsp of mustard, 3 cloves of minced garlic, oil, and wine vinegar. Mix gently with a fork so it looks like a dressing not like a paste.
  • Drain water from potatoes and place them nicely on a platter.
  • Take the vinaigrette dressing and pour over the potatoes and enjoy.
  • You can serve this dish cold or warm.
