Authentic French Financier Recipe

Who said Christmas has gone and dull and not exciting recipes will come. For today, I have prepared a super delicious, not traditionally, but nutty and tasty Financier Dessert! A crispy crust which hides delicate and soft texture with interspersed slightly sticky crumbles of praline.

Ingredients

  • 2/3 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup praline powder
  • 1 cup icing sugar
  • 3 egg whites
  • 1/2 cup unsalted butter

For Praline:

  • 1/2 cup almonds
  • 1/2 cup hazelnuts
  • 1 cup sugar

Instructions

  • Put ½ cup of butter in a saucepan and boil until it turns brown and smells like a hazelnut. Once ready, pour it into a bowl, leaving the dark sediments in the saucepan. Set aside to cool a little.
  • Combine browned butter with 2/3 cup of all-purpose flour, 1/2 cup almond flour, 1/2 cup praline powder, and 1 cup of icing sugar in a mixing bowl. Beat three egg whites until they form stiff peaks. Gently incorporate them into flour&nutty mixture, trying not to overmix.
  • Spoon the batter into molds and sprinkle every cake with one tablespoon of praline powder.
  • Bake financier in preheated oven to 300°F for 30 minutes.
