Ingredients

  • 1 can chickpeas
  • 1 avocado
  • 1 cucumber
  • 1 carrot
  • 1/2 red onion
  • 2 cloves garlic
  • 5 cherries
  • 3 dried tomatoes
  • arugula
  • 1 tbsp olive oil
  • 1 tsp lemon juice

Instructions

  • Take a hand blender and mix the chickpeas, 2 cloves of garlic, 1 tbsp of olive oil, spices, and 2-3 dried tomatoes for saltiness and more flavour. Mix well until the it looks like a fine paste. It takes about 2-3 minutes to blend well the hummus.
  • Optional you can toast the bread, grill or use it as it is. Spread some amount of hummus on one slice of bread and top over raw veggies. (Veggies thinly sliced). Spread some amount of hummus on the other slice of bread and top it on the veggies.
  • Serve immediately.
