Loaded Cheesy Hasselback Potatoes
Hasselback potatoes, that also go under the name Accordion Potatoes are clearly the most impressive dish that will give a special twist to any table.
- 8 potatoes
- 4 oz salami
- 1 cup grated mozzarella
- 1/3 cup grated parmesan
- salt and pepper
- 1 tsp paprika
- 3 tbsp olive oil
Wash and scrub medium to big size potatoes. Then taking care not to cut all the way through the bottom of the potato cut them thin slices down.
Arrange them (the cut side up) in a previously greased with olive oil baking tray. Season generously with salt, pepper, and paprika. Drizzle some olive oil on the top.
Bake in a preheated oven at 400 °F for about 50-60 minutes or until crispy on the top and soft in the middle.
When the elapsed time, remove the potato out from the oven and fill each slot with salami slices. Top generously with grated cheese and return to the oven. Roast in the oven for further 15-20 minutes until the cheese has melted and is golden and bubbly.
Garnish with fresh chopped herbs and sour cream if desired.
