Soft & Airy Cottage Cheese Pancakes

Homemade cottage cheese pancakes - a special dish served for breakfast or as a treat. It is a very simple recipe for fluffy fried cheese pancakes topped with fresh fruits or any favorite jam.

Ingredients

  • 16 oz cottage cheese
  • 2 eggs
  • 5-6 tbsp all-purpose flour
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 3 tbsp butter

Instructions

  • Blend the cottage cheese using a kitchen robot
  • Add the sugar, the salt and one teaspoon of vanilla extract.
  • Crack and add the eggs to the cottage cheese and mix using a spatula or fork
  • Add all-purpose flour into the composition. Stir until the dough is formed
  • Sprinkle some flour on the working surface of your kitchen table. Place the cheese dough on that surface and form a 2 inches thick tube using your hands
  • Now slice it into equal circles of about 0.5 inches thick. Roll each cottage cheese circle and sprinkle some flour on top
  • Take a large frying pan with a diameter of at least 9 inches and heat it up.
  • Add one tablespoon of butter and let it melt
  • Add the cheesecake rolls in it and fry on medium-low heat for about 2 minutes on each side until golden brown
  • Cover the pan with a lid and keep on low heat for 3 additional minutes
  • Serve with pleasure with your favorite topping
