Baked Parmesan Turkey Cutlets

Ingredients

  • 1 pound turkey breast cutlets about 4 slices
  • 3 eggs
  • 1 cup bread crumbs
  • 1 cup grated parmesan
  • 1/2 cup tomato sauce
  • 1 cup grated mozzarella
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1 tsp ground garlic

Instructions

  • Carefully clean the turkey breast from the skin, bone, and extra fat, if needed. Flatten 4 slices of turkey breast. Season slices with salt, pepper, and ground garlic and leave them aside to rest.
  • Lay a baking tray with a piece of parchment paper and grease it a little with some drops of olive oil.
  • Beat 3 eggs with a pinch of salt and pepper.
  • In a wide and shallow bowl/ plate pour one cup of bread crumbs and one cup of grated parmesan. Mix them well.
  • Take one slice of turkey breast and dip it in the egg mixture to coat, letting excess drip off. Then, coat them with the parmesan and bread crumb mixture. If you like the crust thicker you can repeat this process one more time. Lay the cutlets on the prepared baking tray. Repeat with all of the turkey slices.
  • Preheat the oven to 425 °F. Bake turkey cutlets for 20 minutes.
  • After the elapsed time, when turkey cutlets are light-golden color remove them from the oven. Top each piece with one tbsp of tomato sauce and some shredded mozzarella cheese. Return the dish to the oven and bake for an additional 10 minutes, until the cheese is melted well.
  • Garnish with some chopped parsley and serve with your favorite side dish.
