Shrimp Avocado Salad

When thinking about fast and tasty to prepare dinner with minimum calories I always opt for vegetables with some proteins. And in most cases, the win-win products for me are shrimp and avocado.

Equipment

Ingredients

  • 1 lb shrimp
  • 3 tomatoes
  • 2 cucumbers
  • 2 avocado
  • 1 onion
  • cilantro

Shrimp Marinade

  • 1/2 lemon juice
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 2 tbsp olive oil
  • 1 clove garlic

Instructions

  • Peel and devein about 1 lb. shrimp ( if you do not have shelled ones). Season shrimp with salt, pepper, garlic, lemon juice, and some olive oil. Leave them for about 15 minutes to marinate.


  • Preheat the pan with 1tbsp of olive oil. When it is heated add shrimp and cook them for about 2-3 minute on each size.
  • When the shrimp are cooked on both sides, add them to the cutting board and dice them to medium size cubes.
  • Chop 3 tomatoes in medium size cubes, 2 avocados, 2 cucumbers, and 1 small onion.
  • Place all the ingredients on a plate and squeeze the juice of half a 1 lemon/lime over the salad.
  • Finely chop half a bunch of fresh cilantro and stir together all the ingredients.
