Ingredients

  • 6 chicken drumsticks
  • 1/2 cup brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 2 tbsp olive oil

Instructions

  • Wash and clean the chicken drumsticks. Pat dry them to handle easier when trimming. Insert the kitchen shears underneath the skin about one inch from the top of the drumstick knuckle. Cut all the way around the bone. Pull off the skin over the knuckle. Holding the bony, push the meat down the drumstick to the bottom. Using a sharp knife, scrape the exposed bone to remove any flesh. For nice-looking lollipops, fix the skin down to cover as much of the meat as possible
  • In a mixing bowl, combine condiments: ½ cup of brown sugar, ½ tbsp salt, ¼ tsp black pepper, 1 tsp of each: garlic powder, cayenne pepper, smoked paprika, and ground coriander. Mix until it looks nice and perfect powder.
  • Grab one chicken lollipop and brush it with a bit of olive oil. Then coat lollipops generously with condiments. Wrap the bony ends with foil. Arrange drumsticks with bony ends up in a previously greased with oil baking tray.
  • Bake at 375°F for about 30-35 minutes.
  • Serve with pleasure!
