Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1 ¼ cups mascarpone cheese
  • 1 ¼ cups all-purpose flour
  • 2 tsp baking powder
  • 4 apples
  • 4 tbsp cinnamon powder
  • 2 tbsp icing sugar

Instructions

  • Preheat the oven to 350°F. Grease the side, line the base of the 9-inch springform pan with baking paper and set it aside.
  • In a large mixing bowl, crack four eggs. Beat them a little, and then slowly add 1 cup of sugar. Whisk vigorously until frothy. Once you obtain a beautiful foam, whisk in 1 ¼ cups of mascarpone cheese. It is time to incorporate dry ingredients. Gradually whisk in 1 ¼ cups of all-purpose flour and 2 teaspoons of baking powder.
  • Grab and peel 2 apples. Next, cut them into medium size chunks and incorporate them into the batter. Add in 2 tablespoons of cinnamon powder and mix again. Scrape the apple cake batter into the prepared pan and level it off.
  • Peel, core, and thinly slice the remaining apples. Arrange the slices in concentric circles over the batter, starting from the edges and finishing in the center. At this point, sprinkle the apple cake with 2 tablespoons of icing sugar and with the same amount of cinnamon powder.
  • Send the apple cake to the oven and bake for about 45 minutes.
  • When baked, do not remove the cake from the pan. First, allow it to cool a little.
