Spring Vegan Chickpea Salad with Radish
An extremely simple and quick spring salad is the Chickpea Radish and Cucumber crunchy salad to enjoy next to anything. This Vegan salad is a plant-based protein with a fresh and light taste.
- 1 cup canned chickpeas
- 1 cucumber
- 4 radishes
- 1/2 cup dill and parsley
- green leaves
- 3 tbsp olive oil
- lemon juice
Take a large cutting board and start cutting rounds radish, cucumber, chop parsley, and dill and add drained chickpeas.
Pour some olive oil and add seasoning to taste.
Take a platter and nicely arrange the salad. Fork in and enjoy a bite of healthiness, colours, and flavours.
