Ingredients

  • 2 cups hard flour
  • 3 eggs
  • 1 egg white
  • 6 oz butter
  • 3 tbsp sugar
  • 1 tsp instant yest
  • 1 tsp salt
  • 1 cup candied fruits
  • 1/2 cup toasted nuts
  • 4 tbsp rum
  • 4 tbsp water
  • 1 vanilla bean

Instructions

  • In a bowl, combine 1 cup of candied fruit mix with four tablespoons of rum and four tablespoons of water. Leave them to soak at room temperature overnight or at least for 8 hours.
  •  Freeze the egg for 10 - 15 minutes directly in the stand mixing bowl.
  • Meanwhile, in a separate bowl, swift the flour. Mix in sugar and salt. If you are using dry yeast, mix it also with dry ingredients, otherwise, add fresh yeast directly to the eggs. Fitt the hook attachment to your mixer. Remove the eggs from the freezer and add flour mixture. Start kneading the dough at low (4) speed until well combined. Increase the speed to medium-high(8). Gradually add in small chilled parts of butter. If you add in all the butter at a time, it will not incorporate correctly into the dough.
  • Continue mixing until the dough forms a smooth, glossy, and plump ball. It should take you about 7-10 minutes. At this point, gently incorporate the soaked (dried of extra liquid) fruits into the batter using your hands.
  • Transfer the brioche dough to a bowl, wrap it with plastic wrap, and let rest overnight or until it double in size.
  • Grease an 8”-x-5” loaf pans with butter and sprinkle it with some brown sugar. Remove brioche dough from the bowl and divide it into three pieces. Roll each of them out into a long rope. The braid them. Transfer the brioche into the prepared pan and leave it proof until doubled in size (1 hour 30 minutes -2 hours).
  • Preheat the oven to 350 °F. Once you have the dough ready to bake, brush them in egg wash. Bake for 30 minutes until golden brown color.
