Instant Pot Fragrant Celery Root Puree

Ingredients

  • 2 lb celery root
  • 2 potatoes
  • 1 onion
  • 3 garlic cloves
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 cup heavy cream
  • 1/2 tsp ground garlic
  • black pepper to taste

Instructions

  • Prepare the vegetables. Using a good sharp knife clean and peel one large celery root (about 2 lb). Then cut it into about 2-inch cubes. Now peel and dice in cubes 2 potatoes.  Finely chop one onion and 3 cloves of garlic.
  • Set the “saute” program on the Instant Pot for 25 minutes and wait for it to read HOT. Add 2 tablespoon of butter and once shimmering add onions and garlic. Cook for about 2 minutes. Then drop the diced celery root and potatoes. Stirring occasionally let it simmer for 5-7 minutes. Furthermore, add 1 tbs of salt and 1 bay leaf. Pour the water just to cover the vegetables ( about 1 cup). Close the instant pot lid and leave it to cook.
  • When the time is almost complete (2-3 minutes left),  open the lid carefully. Then add ½ cup of heavy cream and leave to complete the program. Mash the vegetables using a hand blender or food processor. Season with granulated garlic and black pepper if desired.
