Easy Classic Cheesy Potato Soup

Classic potato soup is an ultimate dish loaded with veggies and a lot of cheese. Creamy and cheesy, this soup is one of my favorites fall comfort food.

Ingredients

  • 6 cups potatoes peeled and diced
  • 1 onion
  • 1 carrot peeled and diced
  • 2 stalks celery
  • 2-3 cup chicken broth
  • 1/3 cup butter
  • 1/3 cup flour
  • 2 cups milk
  • 1/2 cup sour cream

Instructions

  • Peel and dice potatoes, carrots, celery, and onions. Combine diced vegetables with chicken broth in a large pot and season with salt and pepper if needed. Bring to a boil over high heat, then reduce heat to slow-medium, cover the pot and let it cook for about 15 - 20 minutes.
  • Meanwhile, melt butter over medium heat in a small saucepan.  Add flour, whisking constantly, and cook for about one minute. In a minute, while whisking, slowly pour milk and cook until the mixture begins to thicken.
  • Once veggies are soft, incorporate thickened milk mixture to potato soup mixture and stir.
  • While cooking, make sure you stir the soup regularly so that the bottom does not burn. Add sour cream and blend the soup until completely smooth. Taste and season the potato soup if needed with salt and pepper.
